Ingredients

Dough

  • 1 ball of store-bought or homemade pizza dough ~250g

Sauce

  • 3 tbsp hoisin sauce
  • 1 tbsp gochujang Korean chili paste
  • 1 tsp soy sauce
  • 1 tsp rice vinegar

Toppings

  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked Korean BBQ beef bulgogi, thinly sliced
  • 1/4 cup kimchi chopped
  • 2 tbsp red onion thinly sliced
  • 2 scallions chopped
  • 1 tsp sesame seeds optional

Gochujang Aioli (Drizzle)

  • 2 tbsp mayo
  • 1 tsp gochujang
  • 1/2 tsp sesame oil
  • 1/2 tsp honey

Instructions

Preparation

  • Preheat your oven to 475°F (245°C), placing your pizza stone or baking sheet inside to heat.
  • Roll out the pizza dough on a lightly floured surface to about 10–12 inches.
  • In a bowl, mix all sauce ingredients until smooth.
  • In a separate bowl, stir together aioli ingredients and set aside.

Assembly

  • Carefully transfer the rolled-out dough to parchment paper.
  • Spread the Korean-style sauce over the dough using a spoon.
  • Sprinkle mozzarella cheese evenly on top.
  • Add bulgogi beef, chopped kimchi, and sliced red onion.
  • Slide the pizza (with parchment) onto the preheated stone or baking sheet.
  • Bake for 12–15 minutes, until crust is golden and cheese is bubbly.
  • Remove from oven and drizzle with gochujang aioli.
  • Garnish with chopped scallions and sesame seeds.

Notes

  • Shortcut Tip: Use pre-cooked bulgogi from your local Korean market for faster prep.
  • Vegetarian Option: Substitute beef with Korean BBQ-style mushrooms or marinated tofu.
  • Spice Level: Adjust gochujang quantities based on your heat tolerance.
