Ingredients

  • 1 ball pizza dough homemade or store-bought
  • 2 tbsp olive oil plus extra for brushing
  • 6 –7 fresh figs sliced in halves or quarters
  • 4 oz goat cheese crumbled
  • 1 large yellow onion thinly sliced
  • 1 tsp sugar for caramelizing onions
  • 1 tsp fresh thyme leaves or ½ tsp dried thyme
  • ½ cup shredded mozzarella cheese optional, for extra melt
  • Salt and black pepper to taste
  • Balsamic glaze optional, for drizzling after baking

Instructions

  • Preheat your oven to 500°F (260°C) with a pizza stone inside for at least 30 minutes.
  • Heat a cast iron skillet over medium heat. Add 1 tbsp olive oil and the sliced onions. Cook slowly, stirring often, until golden brown and caramelized (about 15–20 minutes). Sprinkle with sugar to enhance sweetness. Remove from heat.
  • Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer it to a floured pizza peel.
  • Brush the dough with 1–2 tbsp olive oil as the base.
  • Sprinkle shredded mozzarella (if using) over the dough to create a light foundation.
  • Evenly spread the caramelized onions across the surface.
  • Arrange the fresh figs over the onions.
  • Crumble goat cheese generously over the top.
  • Sprinkle with fresh thyme leaves, salt, and black pepper.
  • Slide the pizza onto the hot stone and bake for 10–12 minutes, until the crust is golden and crisp.
  • Remove from the oven. Drizzle with balsamic glaze if desired. Slice and serve warm.

Notes

  • Substitute goat cheese with ricotta or blue cheese for a different flavor profile.
  • If fresh figs aren’t in season, use dried figs that have been rehydrated in warm water or balsamic vinegar.
  • A drizzle of honey can be added for extra sweetness.
  • Pair with a light arugula salad to balance the richness of the pizza.
