Caramelized Onion & Goat Cheese Delight Pizza

Ingredients

  • Dough:
  • 1 ball of fresh pizza dough about 250g
  • Flour for dusting

Caramelized Onions:

  • 2 large yellow onions thinly sliced
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • Pinch of salt

Toppings:

  • 4 oz goat cheese crumbled
  • 1 tbsp fresh thyme leaves or ½ tsp dried thyme
  • 1 cup shredded mozzarella cheese
  • 1 tbsp extra virgin olive oil for drizzling
  • Cracked black pepper to taste
  • Optional: arugula for garnish after baking

Instructions

Preparation:

  • Preheat your oven to 500°F (260°C) and place a pizza stone inside if using.
  • In a skillet over medium-low heat, add olive oil and sliced onions. Stir occasionally and cook for 15–20 minutes until deeply golden. Add balsamic vinegar and a pinch of salt in the last few minutes.

Assembly:

  • On a lightly floured surface, stretch or roll the pizza dough into a 10–12 inch round.
  • Transfer the dough to a floured pizza peel or parchment paper.
  • Lightly brush the surface with olive oil.
  • Sprinkle mozzarella over the dough, followed by evenly spreading the caramelized onions.
  • Crumble goat cheese on top and sprinkle thyme.
  • Add cracked black pepper to taste.
  • Slide the pizza onto the hot stone or baking sheet and bake for 10–12 minutes, or until the crust is golden and cheese is bubbling.

Optional Garnish:

  • Top with fresh arugula before serving for a peppery finish.

Notes

  • Want to make it more decadent? Add a drizzle of honey or fig jam post-bake.
  • Use store-bought caramelized onions to save time.
  • This pairs wonderfully with a Pinot Noir or light red wine.
