Preheat your
oven to 475°F (245°C) with a pizza stone inside. If you don’t have a pizza stone, use a baking sheet.
Roll out the pizza dough on a lightly floured surface until about 12 inches in diameter.
Place the dough on parchment paper for easy transfer.
Brush the crust edges with melted butter to help it turn golden brown.
Spread softened cream cheese evenly across the dough as the base. Mix with powdered sugar beforehand if you prefer a sweeter base.
Arrange slices of brie cheese evenly over the cream cheese layer.
Scatter fresh blueberries and raspberries across the pizza.
Transfer the pizza (with parchment) onto the hot pizza stone. Bake for 10–12 minutes, until the crust is golden and the brie is melted.
Remove from the
oven and drizzle lightly with honey.
Garnish with lemon zest and fresh mint leaves. Slice and serve warm.
- For a tangier flavor, substitute raspberries with blackberries.
- Try fig jam instead of honey for a deeper, more luxurious flavor.
- Store leftovers in an airtight container in the fridge for up to 2 days. Best reheated in the oven.
