Ingredients

Dough:

  • 2 cups all-purpose flour
  • ¾ cup warm water
  • 1 tsp dry active yeast
  • 1 tsp sugar
  • 1 tbsp olive oil
  • ½ tsp salt

Coconut Bacon:

  • cups unsweetened coconut flakes
  • 1 tbsp soy sauce or tamari
  • ½ tbsp maple syrup
  • ½ tsp smoked paprika
  • ¼ tsp liquid smoke
  • Pinch black pepper

Sauce:

  • ½ cup tomato sauce
  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp onion powder
  • Pinch of chili flakes optional

Toppings:

  • ½ cup fresh pineapple chunks
  • ¾ cup shredded vegan mozzarella
  • ½ red onion thinly sliced
  • Coconut bacon prepared above
  • Fresh cilantro or green onions for garnish (optional)

Instructions

Make the Dough:

  • In a bowl, mix warm water, sugar, and yeast. Let sit for 5–7 minutes until foamy. Add flour, olive oil, and salt. Knead until smooth, about 5 minutes. Cover and let rise in a warm spot for 20 minutes.

Prepare Coconut Bacon:

  • Preheat oven to 325°F (160°C). In a bowl, mix coconut flakes with soy sauce, maple syrup, smoked paprika, liquid smoke, and pepper. Spread on a baking sheet and bake for 10–12 minutes, tossing halfway through, until golden and crisp. Let cool.

Preheat Oven:

  • Increase oven to 450°F (230°C) and place your pizza stone or baking sheet inside to preheat.

Notes

  • Short on time? Use store-bought vegan pizza dough to cut prep time.
  • Spice it up: Add jalapeños or a drizzle of sriracha.
  • Make it gluten-free: Use a gluten-free crust and tamari instead of soy sauce.
  • Storage: Coconut bacon keeps in an airtight jar for up to a week—great for salads too!
