Preparation:
Make the Dough:
- In a small bowl, mix warm water, sugar, and yeast. Let it sit for 5–7 minutes until frothy.
- In a large bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
- Knead on a lightly floured surface for 6–8 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
- (If using store-bought dough, let it rest at room temperature for 30 minutes before shaping.)
Prepare Toppings:
- Slice figs, tear mozzarella, and set aside prosciutto and arugula.
Assembly:
Shape the Dough:
- Preheat oven to 250°C (475°F).
- Roll or stretch dough into a 12-inch circle. Transfer to a floured baking peel or parchment paper.
Build the Pizza:
