Ingredients

For the Dough:

  • 2 ¼ tsp active dry yeast 1 packet
  • 1 tsp sugar
  • ¾ cup warm water around 110°F / 43°C
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp olive oil

For the Char Siu Pork (Shortcut Version):

  • 1 lb pork shoulder or pork loin thinly sliced
  • 2 tbsp hoisin sauce
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp Chinese cooking wine Shaoxing wine or dry sherry
  • ½ tsp five-spice powder
  • 1 clove garlic minced
  • Red food coloring optional, for authentic look

For the Sauce:

  • ¼ cup hoisin sauce
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • ½ tsp grated ginger

Toppings:

  • 1 ½ cups shredded mozzarella cheese
  • ½ cup fresh pineapple chunks
  • ½ red onion thinly sliced
  • 2 scallions chopped (for garnish)
  • Fresh cilantro leaves optional
  • Toasted sesame seeds optional

Instructions

Make the Dough:

  • In a bowl, combine yeast, sugar, and warm water. Let sit for 5 minutes until foamy. Stir in flour, salt, and olive oil. Knead on a floured surface for 5–7 minutes until smooth. Place in a greased bowl, cover, and let rise for 30 minutes or until doubled.

Marinate the Pork:

  • In a separate bowl, whisk together hoisin, honey, soy sauce, cooking wine, five-spice powder, garlic, and optional food coloring. Add sliced pork and marinate for at least 20 minutes (up to overnight in the fridge).

Cook the Pork:

  • Heat a skillet or grill pan over medium-high heat. Sear the marinated pork for 2–3 minutes per side until caramelized and cooked through. Remove from heat and set aside.

Make the Sauce:

  • Stir together hoisin sauce, soy sauce, sesame oil, and ginger in a small bowl. Set aside.

Notes

  • Shortcut Pork Tip: Use pre-made Char Siu pork from your local Asian market or deli if short on time.
  • Make it Spicy: Add sliced fresh red chili or a drizzle of chili crisp oil before serving.
  • Pineapple Swap: Grilled mango chunks make a fun variation.
  • No Pizza Stone? A heavy-duty baking sheet works just fine—just make sure it’s preheated.
